Strawberry Sorbet
1/2 C sugar
1 C water
4 C fresh or thawed frozen strawberries
1 T lemon juice
1. Combine sugar and water in heavy saucepan. Bring to a boil. Reduce heat to low and simmer until all sugar is dissolved.
2. Remove from heat; place in refrigerator and cool completely.
3. Puree strawberries; then add lemon juice and sugar water.
4. Process in ice cream maker (20-40 minutes). Freeze in freezer for a firmer sorbet.
Vanilla Gelato
2 C milk
1 C heavy cream
4 egg yolks
1/2 C sugar
1 or 2 t vanilla (I added this on a whim...just did 2 capfuls of imitation)
1. In medium saucepan combine milk and cream. Warm until foam forms around the edges. Remove.
2. In large bowl, beat yolks and sugar until frothy. Add vanilla. Gradually add 1/2 of the milk mixture, whisking constantly. Return to pan (with the rest of the milk mixture) and cook over medium heat until the mixture gels slightly and coats the back of a wooden spoon (I let it cook for a few minutes after it reached 170 degrees).
3. Pour through sieve. Cover and chill
4. Freeze in machine, then in freezer until firm.
